The Specialty Coffee Academy is the advanced education, training, research, certification, and innovation arm of the Kenya Coffee School (KCS)—covering the entire coffee value chain from farm to cup. This is consistent with the Academy Constitution already developed by KCS.

1. School of Coffee Agronomy & Farming
Coffee varieties, soil health, agroecology, climate-smart coffee, irrigation, nutrition, pests, harvesting and farm economics.
2. School of Green Coffee & Processing
Cherry harvesting, wet/dry processing, fermentation, drying, grading, storage, traceability and quality management.
3. School of Roasting Science
Roast profiling, heat transfer, roast development, equipment operation, profiling software, quality control and commercial roasting.
4. School of Barista & Brewing Arts
Espresso, manual brewing, extraction science, milk science, latte art, café workflow, equipment calibration and customer experience.
5. School of Sensory & Coffee Quality
Cupping, sensory evaluation, defects, flavour development, coffee chemistry, quality scoring and professional coffee evaluation.
6. School of Coffee Business, Trade & Entrepreneurship
Café management, roastery development, branding, marketing, direct trade, farmer markets, finance, hospitality and coffee entrepreneurship.
Academy qualification pathway
Foundation → Certificate → Diploma → Professional → Advanced/Micro-Masters → Coffee MBA
This fits naturally with the existing KCS model of progressive coffee education and the broader specialty-coffee academy structure.
What makes the KCS Specialty Coffee Academy different
Rather than being only a barista school, the Academy serves as an African coffee skills ecosystem:
FARM → PROCESS → ROAST → BREW → TASTE → TRADE → ENTREPRENEURSHIP
It combines KCS’s Seed-to-Cup approach with Barista Mtaani, specialty coffee science, agroecology, youth skills development, digital learning, traceability and farmer-centered trade. The existing KCS vision explicitly frames the next-generation Academy around specialty coffee science, roasting, sensory mastery, agroecology, youth employment, entrepreneurship and digital skills.
